Akademia Smaku ("Academy of Taste") is the most ambitious kitchen in Gdynia and one of the leading fine-dining rooms in northern Poland — a tasting-menu restaurant with strong Baltic seafood, foraged ingredients from the Kashubian forests inland, and well-judged use of older Polish techniques (smoking, fermenting, ageing).
Eight- to twelve-course menus, paired wines, around 90 minutes. Booking essential, often two to three weeks ahead at weekends.
