Albarracín's cooking is inland Aragonese: roast lamb (ternasco) cooked in a wood-fired oven, migas (fried breadcrumbs with chorizo), trout from the local rivers, and the heavy garlic-and-paprika stews that fortify shepherds against the mountain winters. A handful of restaurants in the upper town do this kind of food well.
