Bar Gaucho on Calle Espoz y Mina is widely regarded as one of the best pintxos bars in Pamplona. The counter is loaded with imaginative combinations — txangurro (spider crab) on toast, anchovy with piquillo pepper, foie gras with apple reduction — and the kitchen turns out hot pintxos throughout the evening.
The bar gets busy early, especially on weekends, when locals pack in to eat standing at the counter. Come at opening time (around 19:30) if you want a choice of everything on offer. A plate and a glass of the local rosado is one of the better cheap meals in the city.
