Odessa has a distinctive culinary identity built on Black Sea seafood and the cosmopolitan influences of its 19th-century population. Fish dominates — Black Sea mullet, flounder, and sprats prepared simply and served with local wine. The Jewish culinary tradition is still visible in some of the older establishments: stuffed carp, gefilte fish, and dense rye bread. Derybasivska Street and its side streets have plenty of cafes and restaurants catering to visitors; for a more local experience, try the restaurants in the Moldavanka district south of the centre.
