The UK's most northerly whisky and gin distillery, set up in 2018 on the site of the former RAF Saxa Vord radar station at the very top of Unst. Tours are small and personal — usually run by one of the founding team — and cover the malting (their barley comes from the Black Isle on the Scottish mainland), the small stills, and the maturation warehouse where the first single malts are now coming of age. The gin is widely available across Shetland; the whisky is still in short supply.
Combine a visit with the Valhalla Brewery next door, which makes ales (including a popular peat-smoked Black Eagle) and shares some of the same site. The bar at Saxa Vord is open for tastings and serves food. Check current tour times on the website before driving up.
