Scotchies is a jerk institution — not the original (Scotchies started in Montego Bay), but the Kingston branch on Constant Spring Road is among the most reliable places in the capital to eat proper jerk. The pork and chicken are cooked over pimento wood in low, lidded barbecue pits, which is the method that produces real jerk rather than the grilled-and-sauced approximation served at most tourist destinations.

The open-air setting, rough wooden tables, and lack of any pretension are characteristic of the better Jamaican jerk operations. Order at the counter, find a table, get a Red Stripe, and eat. The bammy, festival, and roasted corn served alongside are all good. Go early — by early afternoon the better cuts are often sold out and the quality drops.
