Set in a beautifully converted colonial building on the Alcade pedestrian street near the Cathedral, La Fonda de San Miguel is one of the most reliably excellent restaurants in the Guadalajara historic centre. The setting — stone arches, tiled floors, inner courtyard — is the kind that makes food taste better, and the traditional Jaliscan menu holds up its end of the bargain.
The birria de chivo (slow-cooked goat stew) and the pozole are both outstanding. The price point is higher than the market stalls but reasonable for the quality. Open daily for lunch and dinner.
