Las 9 Esquinas is the best-known destination in the neighbourhood of the same name for birria — Guadalajara's signature dish of slow-cooked spiced meat (traditionally goat, sometimes beef or lamb) served in a consommé with tortillas, onion, and lime. The restaurant occupies a simple room a few blocks south of the historic centre in a neighbourhood that retains a traditional feel.
