Edwins is a serious French restaurant on Shaker Square that doubles as a culinary school for formerly incarcerated men and women. The food is unselfconsciously classical — onion soup, escargots, steak frites, duck à l'orange — and the service is poised; the only way you would know the staff were students is the slightly extra care everyone takes.

The wine list leans French and is one of the best curated in Cleveland. The dining room is warm and quiet. A separate bakery and butcher shop on the same block sell house-made bread and charcuterie to take away.

Edwins is run as a six-month culinary apprenticeship for men and women returning from prison. The founder Brandon Chrostowski spent his twenties cooking in Chicago and Paris before returning to Cleveland to open the programme, and the restaurant now graduates around a hundred students a year, with most going on to jobs in restaurants across the country.
