The Saipal Bakery (Padaria Saipal) is one of Pancho Guedes's most photographed buildings — a long single-storey industrial bakery on Avenida Eduardo Mondlane with a roof of repeated concrete scallops that look like a row of waves. Completed in 1954, the building is a working bakery to this day; its bread is sold across central Maputo.
It is best viewed from the opposite pavement. The interior is not open to visitors. The bakery is an easy ten-minute walk from the railway station and forms a natural stop on any architecture tour of the upper Baixa.
