Quanzhou's food is Minnan cuisine at its most locally concentrated: beef soup, oyster pancakes, satay noodles (a legacy of Hokkien emigrants who returned from Southeast Asia), and the deep-fried spring rolls that are a signature of the city's street food culture. The night market streets around Zhongshan Road are the best places to eat cheaply; the restaurants around Kaiyuan Temple serve more elaborate Fujian seafood preparations. Anxi Tieguanyin oolong — grown in the mountains just inland — is ubiquitous in tea shops and deserves unhurried attention.
