Nanchang Spicy Tofu Skin (豆腐干)

Nanchang's dried and smoked tofu skin (豆腐干, dòufu gān) is one of Jiangxi's most distinctive snack products — firm slabs of pressed tofu that have been dried, smoked, and marinated in chilli and five-spice, giving them a chewy, intensely flavored character unlike most tofu preparations. Street vendors sell them from carts, sliced thin and served on toothpicks, for 2 to 5 yuan per portion.

The best versions are made by small producers who smoke the tofu themselves; the mass-produced packaged versions sold in convenience stores are a pale imitation. The night market around Shengjin Tower has reliable vendors. The product keeps well at room temperature and makes a reasonable edible souvenir — far better than the packaged tourist food at the airport.
