Xining has three main food traditions converging in one city: Hui Muslim cooking (lamb-centred, no pork, heavy on cumin and chilli), Tibetan food (yak meat, tsampa, butter tea, momo dumplings), and Han Chinese cooking in the Shaanxi and Gansu styles that dominate the northwest. The best eating is in the Muslim quarter around Dongguan Street and along the lanes behind the Xining Railway Station.
