Misen Osu Honten

Misen opened in 1965 and invented Taiwan ramen, which is — despite the name — a Nagoya original: a fiery soup of soy and chili oil with crumbled spiced minced pork, garlic chives and bean sprouts. The shop's founder, a Taiwanese immigrant, adapted a dan dan noodle recipe to suit the local taste for stronger flavours, and the dish has since spread across Japan under his neighbourhood's branding.

The Osu Honten is the original and still the busiest. The standard order is taiwan ramen and a half-portion of fried rice with sesame oil; the heat level is adjustable on request. About 1,200 yen for the set. Cash only at the original location. Open until 3am most nights, useful for post-bar eating.
