Yabaton Yabachoten

The flagship of the Yabaton chain — three storeys on a corner in Osu, with the company's stylised pig mascot looming from the facade. Yabaton has been serving miso-katsu (deep-fried pork cutlet under a thick blanket of haccho red miso sauce) since 1947, and is widely considered the definitive version of the dish. The classic order is the "waraji" miso katsu set — a long, sandal-shaped cutlet, miso poured at the table, with rice and tonjiru pork miso soup.

Lines build at peak times but move quickly. About 1,800 yen for a set. Branches sit inside Nagoya Station and in most Aichi Prefecture train stations, but the Yabachoten flagship is the one to visit if you have a choice.
