Phu Quoc's best eating is seafood, and the freshest is found at the fishing villages and at the Dinh Cau Night Market in Duong Dong. The market runs along the seafront every evening from around 5pm: stalls sell grilled seafood, fresh spring rolls, and local specialities at prices substantially below resort restaurant levels. Pointing at the live tanks and negotiating the price by weight is the standard approach.

The island has its own distinct food traditions beyond the fish sauce: sim wine, made from the purple berries of the sim shrub that grows wild in the hills, is the local spirit; fresh pepper (the island has pepper plantations) ends up in everything from crab to cocktails; and the nuoc mam (fish sauce) made here has a different character to the mainland product — more complex, less sharp.
