You sit, you order an Adjaruli of the size that seems sensible (the standard is enormous), and a wood-fired version arrives in a few minutes — golden, eggy, salty, and rich. They also do other Georgian classics — khinkali, lobiani, ostri — but the Adjaruli is the reason to come.
