Marsala's kitchen leans on the sea and on western Sicilian staples: couscous (a clear Arab inheritance), bottarga from the lagoon mullets, fresh tuna and swordfish from the strait. Wine pairings are absurdly easy here, and most decent restaurants will pour a Grillo or a dry Marsala by the glass.
