Amsterdam invented the brown cafe — bruine kroeg — and there are still hundreds of them: dark-panelled, beer-stained, unhurried. Beyond the traditional cafes, the city has serious beer bars, jazz venues, grand cafes with canal terraces, and Paradiso, one of Europe's great live music venues. Most places stay open until 2 or 3am on weekdays, later on weekends.
