Hiša Franko

Hiša Franko is a restaurant and inn in a farmhouse near Kobarid, run by Ana Roš — one of the most celebrated chefs in Europe. Roš is largely self-taught; she left a career as a diplomat's wife to take over her partner's family restaurant in the 1990s and has since transformed it into an internationally recognised destination.

The cooking draws on the Soča Valley and the surrounding Julian Alps: foraging, local producers, and a sensibility that is distinctly Slovenian rather than borrowing from French or Italian traditions. The tasting menu changes with the seasons. Hiša Franko appears on the World's 50 Best Restaurants list and is almost impossible to book at short notice; reservations should be made months ahead.
