Oviedo is sidra country. Asturian cider is poured in a ritual called escanciar — the bartender holds the bottle above their head and pours a thin stream into a wide glass held at hip level, aerating the cider on the way down. You drink most of it in one go, leaving the last centimetre (the culete) to swirl and toss on the floor. Sidrerías cluster along Calle Gascona and throughout the old quarter. Expect to pay around two euros a pour.
