Asturian food is hearty mountain cuisine built around beans, pork, and cheese. The signature dish is fabada asturiana — a slow-cooked white bean stew with chorizo, morcilla (blood sausage), and lacón (cured pork shoulder). Cachopo is another local heavyweight: two large veal fillets stuffed with ham and cheese, breaded and fried. Portions are enormous and prices are fair by Spanish standards. Most restaurants in the old town serve solid versions of both.
