Seafood dominates the menu in Guaymas, as you'd expect from a port city on the Sea of Cortez. Shrimp is the local speciality — shrimp tacos, breaded shrimp, and shrimp sauté are all reliably good. Los Barcos in downtown Guaymas is a well-regarded seafood restaurant; note that many local places are cash-only and kitchens close early (around 6:30 pm). San Carlos has a broader range of options, including several restaurant-bars in the marinas.
