The Herbivorous Butcher

The Herbivorous Butcher in Northeast Minneapolis bills itself as the first vegan butcher shop in America, selling plant-based versions of deli meats, cheeses, and prepared foods that look and taste sufficiently like their animal-based counterparts to confuse even committed carnivores. The shop produces everything in-house from wheat gluten, tofu, nuts, and other plant proteins.

The product range includes smoked Gouda, plant-based pepperoni, maple-glazed breakfast sausage, and a rotating selection of seasonal products. The shop is open daily and also does a brisk mail-order business. It is worth visiting even if you are not vegan: the production process is genuinely interesting and the products are considerably more sophisticated than commercial vegan substitutes.

Siblings Kale and Aubry Walch opened the first 100% vegan butcher shop in the United States in Northeast Minneapolis in 2016, having funded it through a Kickstarter campaign that raised $55,000 in 72 hours — still one of the most successful food-related crowdfunding campaigns in Minnesota history. The shop was an immediate national story; lines stretched around the block on opening day.
