Biatüwi is unusual even for Manaus: an indigenous-run restaurant that serves food prepared in the Tukano tradition of the upper Rio Negro. The menu changes daily depending on what the cooks have brought back from the market or from their home villages — fish smoked over green wood, manioc cakes, peppery jambu and tucupi sauces, beverages made from forest fruits.
Service is unhurried; the dining room is small and informal. The restaurant works as both a place to eat and a small cultural project, and is much closer to how families in the Rio Negro headwaters actually cook than the version of "Amazonian cuisine" you get in the city's upmarket kitchens.
