Divinus

Divinus is one of Viña del Mar's better-regarded restaurants, known for modern Chilean cuisine that takes Pacific seafood seriously without over-elaborating it. The kitchen works with local fish and shellfish — corvina, machas (razor clams), centolla (king crab from the far south) when in season — and the cooking is precise without being showy. It is the kind of place that Santiago visitors seek out when they want something better than the beachside marisquerías.

The wine list is strong, as you would expect from a Chilean restaurant at this level, and the staff know it well. Book ahead in January and February; the rest of the year is more relaxed. It is a proper sit-down meal rather than a quick lunch, so allow two hours and come hungry.
