Located in the colonial village of Girón, this unpretentious lonchería is one of the best arguments for making the short trip from Bucaramanga. The kitchen focuses on the Girón regional variation of Santanderean food — slightly lighter and more focused on river fish alongside the usual goat and pork. The caldo de costilla (beef rib broth with potato and coriander) is a good way to start. Outdoor tables face the whitewashed street and the pace is deliberately unhurried. Best visited for a long lunch after walking the village.
