The Atlantic catches make their way from the Cape Point beach into the kitchens of Bakau and the surrounding resort strip within hours. Fresh barracuda, grouper, and bream are the defaults, grilled simply or cooked into Gambian dishes. Benachin — the one-pot rice dish cooked in tomato and fish or meat — and domoda, a thick groundnut stew, are the local standards worth seeking out. The resort strip along the Senegambia area caters heavily to European visitors, but the local chop shops a few streets back serve real food at real prices.
