Twelve or thirteen items at any time — dal, three vegetables, papad, kadhi, fresh rotis, rice, churma, sweet, pickle — all brought to your table in steel bowls until you give up.
No tourist-menu nonsense; you eat at long communal tables with Udaipur families and businessmen on their lunch break. The food is fresher and better than at half the upmarket rooftop places. Lunch and dinner; arrive at off-peak hours unless you don't mind queueing.
