Faloodeh Stalls in the Bazaar

Faloodeh — frozen rice-noodle dessert — at its source

Faloodeh — chilled, slightly sweet, made from thin rice noodles in a rosewater syrup with lime juice — is said to have originated near Shiraz, and the city's faloodeh has a reputation right across Iran. The classic place to try it is at one of the small stalls along the edges of the Vakil Bazaar, where a paper cup costs almost nothing and is eaten standing up.

Order it with a squeeze of fresh lime juice (almost everyone does) and a generous spoonful of sour-cherry syrup if you want to go further. On a hot Shirazi afternoon, it is one of the best things you can eat.
