Moslem Restaurant

Moslem is an institution of the Tehran bazaar — a large, bustling, noisy restaurant that has been feeding merchants, porters, and shoppers from the Grand Bazaar since the early 20th century. It is one of those places where the food, the crowd, the speed, and the atmosphere together create something greater than any individual element. You will share a table with strangers. Your food will arrive quickly. You will eat well and cheaply.

The speciality is chelo kabab — the national dish of Iran, which is grilled minced lamb (koobideh) or marinated lamb fillet (barg) on a skewer, served with saffron-infused basmati rice, roasted tomato, and raw butter. The butter melts slowly onto the rice and the tomato is squeezed over it. It is one of those dishes that tastes better in a crowded room than in a formal restaurant. Moslem does it the right way.
