Na Spilce is the restaurant and pub on the grounds of the Pilsner Urquell Brewery, and it is the best place in the world to drink Pilsner Urquell. The vast hall — it seats over 700 people — was built in 1929 in a Functionalist style and was the fermentation cellar (hence the name: "spilka" means fermenting cellar). It has been a restaurant since the 1970s.
The beer here is served from tanks, unfiltered and unpasteurised, which makes it noticeably different from the version you buy in a bottle or can: creamier, slightly yeasty, with a fuller hop character. Alongside the standard Czech menu — schnitzel, roast pork, goulash, svíčková — there are usually a few seasonal dishes. Prices are reasonable for a tourist-facing operation, and the service is efficient even when the hall is full. You don't need to be on a brewery tour to eat here; the restaurant is open daily from lunch. Reservations are worth making in summer.
