Dingle Distillery was founded in 2012 in an old sawmill on the edge of town and is one of the small wave of independent Irish whiskey distilleries that have opened in the past decade. It distils whiskey, gin, and vodka, and is one of the few that uses traditional copper pot stills for its single malts rather than industrial column stills.
Tours run several times a day in season and cover the mash house, the still room, and a tasting of the current core range. The shop sells single-cask bottles released only on site — worth knowing for collectors. Booking ahead is essential in summer. The distillery is about a kilometre west of the town centre, an easy walk along the harbour road.
