Termoli is a fishing town and the cooking reflects it: brodetto alla termolese (a saffron-scented fish stew) is the local pride, made with whatever the boats brought in that morning. Outside the borgo there is little reason to eat — the best restaurants cluster inside the old walls and along the seafront.
