Les Cols is the Olot restaurant that put the town on the gastronomic map. Run by chef Fina Puigdevall in a 13th-century Catalan masia on the southern edge of the town, it holds two Michelin stars and has done so for years. The cuisine is rooted in the volcanic terroir of the Garrotxa: fesol beans, buckwheat, local pork, mushrooms from the forests above the town.
The dining room is one of the strangest in Catalonia — designed by Olot-born architects RCR Arquitectes (who later won the 2017 Pritzker Prize), with gold-coloured walls and steel furniture that turn the historic farmhouse into a contemporary art installation. The tasting menu is the only option and is the experience. Reserve well in advance.
