Christ Church is the centre of Barbados's visitor dining scene. St. Lawrence Gap alone has dozens of restaurants covering everything from rum-soaked beach shacks to proper tables with starched linen. The Oistins Fish Fry — held every Friday and Saturday evening — is in a category of its own: buy your fish from the stall, claim a picnic bench, and eat it while the bass shakes the car parks.

Bajan food at its best is deceptively simple: flying fish seasoned with herbs, baked or fried; cou-cou (polenta-like cornmeal with okra); macaroni pie; and pudding and souse on Saturdays. Look for these at the fish fry or at the roadside rum shops that dot the parish.
