Michoacan has one of Mexico's most distinctive regional cuisines, and Morelia is the best place to experience it. Carnitas (slow-cooked pork), uchepos (fresh sweet corn tamales), corundas (triangular tamales in leaf wrappers), and churipo (a rich beef stew with chiles and vegetables) are all local specialties. Look for fondas in the Mercado Independencia or along Calle Galeana for the most authentic and affordable versions of all of these.
