A legendary Gujarati thali restaurant near Ellisbridge, Pakwan has been feeding Ahmedabad for decades. The unlimited thali arrives on a steel plate crowded with small bowls of dal, kadhi, shaak (vegetable dishes), rotli, rice, pickles, papad and something sweet to finish. Portions are refilled before you can ask. Pure vegetarian, as is standard in Gujarat, and very affordable — this is a working lunch spot, not a tourist restaurant.
