Ubud has become a centre for Balinese cooking classes, and the best ones are genuinely instructive rather than just tourist entertainment. The typical format begins with a guided walk through the morning market to select ingredients, followed by a half-day class preparing a set menu of Balinese dishes — nasi goreng, sate lilit (minced fish satay on lemongrass stalks), lawar (a spiced meat and vegetable mix), and a bebek betutu (slow-cooked duck) or similar centrepiece. You eat what you cook.
Classes run for 4–5 hours and are widely available at different price points; look for ones where the class is small and the teacher is actually Balinese rather than a professional culinary instructor. Casa Luna, established by Janet DeNeefe, is one of the longest-running and most respected. Book ahead — popular classes fill up.
