Eating in Takamatsu means eating sanuki udon — thick, chewy wheat noodles served in a clear dashi broth, topped with a raw egg, a piece of fried tofu (kake udon), or whatever else you like from the counter. The noodles are notably firmer and more elastic than udon elsewhere in Japan, and locals are quietly but deeply proud of them. Shops range from self-service canteens where you pick up a bowl at the counter to sit-down restaurants with more elaborate preparations. Most open early and close by mid-afternoon when the noodles run out.
