Ræst, the sister restaurant of Koks, occupies an old wooden house in the centre of Tórshavn and serves a tasting menu built around the most distinctly Faroese cooking technique: ræst, the slow wind-fermentation of meat and fish. Expect ræst lamb, fermented cod, dried fish, and rich, salty flavours that can take Western palates by surprise.
A serious experience for adventurous eaters, and considerably easier to get into than Koks. Book ahead and bring an appetite.
