The principal day trip from Dijon is south through the Côte de Nuits and Côte de Beaune — the world's most concentrated stretch of premium vineyards. The Route des Grands Crus, a signposted wine road, runs from Dijon to Santenay past Gevrey-Chambertin, Vougeot, Vosne-Romanée, Nuits-Saint-Georges, and the cellars of Beaune.
Beaune itself, the wine capital of Burgundy and home to the famous Hôtel-Dieu (Hospices de Beaune), is 45 minutes by train and easily a full day. Vougeot's Château du Clos de Vougeot, headquarters of the Chevaliers du Tastevin, is a short detour by car. Cluny, with the ruins of what was once the largest church in Christendom, is about 1h30 south.
