Einbeck

Lower Saxon half-timbered town known for bock beer and a major classic-vehicle museum.

Einbeck is a small town in southern Lower Saxony with a surprisingly clear identity: half-timbered streets, strong brewing history, and one of Germany's best collections of historic vehicles. It is not as grand as nearby Goslar or Hildesheim, but it rewards a slow day on foot.

The old town is the main draw. Tiedexer Strasse keeps a long run of 16th-century timber-framed houses, many tied to the period when citizens brewed beer at home and sold it widely. The town's name is linked to bock beer, and Einbecker Brauhaus still makes that heritage visible.

Einbeck's wild card is PS.SPEICHER, a large transport museum in a converted granary. Add Eicke House, the carved Renaissance showpiece on Marktstrasse, and the town has enough real anchors to justify a detour from the Harz or Göttingen.
