A Rome institution serving the cooking of Emilia-Romagna in a hushed, old-fashioned room near the Trevi Fountain. The tortellini in brodo, tagliatelle al ragù bolognese, and cotoletta alla bolognese are the reason to come — hand-rolled pasta in a city otherwise devoted to dried. Run by the same family since the 1960s. One of the rare places in the centro storico where the food rather than the location is the point. Book well ahead.
