Yekaterinburg has the best food in the Urals and one of the strongest restaurant scenes outside Moscow and St Petersburg. Look for pelmeni (Ural meat dumplings, often with three meats — beef, pork and lamb), stroganina (frozen raw fish shaved into curls, originally a northern dish but a Ural staple in winter), shangi (open pies with potato or cottage cheese), and Bashkir-influenced grilled lamb. Several restaurants are putting the food into a contemporary, ingredient-driven idiom.
