El Patio Salteñería on Calle San Alberto is the salteña institution of Sucre. Salteñas — baked half-moon pastries filled with a soupy stew of meat, potato, peas, olives and a hard-boiled egg quarter — are a national obsession in Bolivia, and Sucre serious eaters argue that El Patio's are the best in the country. They are juicier than most, the pastry crisper, the stew well-seasoned. Two per person is the standard breakfast portion.
The trick to eating one is to bite a small corner off the top, sip the broth out before it runs everywhere, then eat the rest. The place opens around 8am and is usually sold out by 11.30. There are seats inside but most regulars take their salteñas to go in a paper cone. Cheap (around 10–15 bolivianos for two) and worth queuing for.
