The Dijon branch of the Loiseau restaurant group, in a 17th-century hôtel particulier near Notre-Dame, has held a Michelin star since 2014. The kitchen serves a refined French menu with strong Burgundian roots — frog legs, escargots, jowls of beef in red wine — with classical technique and lighter, modern presentation.
