Via San Vincenzo, in the Brignole area, is the street for Ligurian food shopping. Over a few hundred metres you will pass through focaccerias (thin, oil-soaked focaccia and the cheese-filled focaccia di Recco), salumerie with hanging sausages and local cured meats, cheese shops with prescinseua and aged pecorino, pasta shops making trofie and mandilli de sea fresh daily, and rosticcerie frying friscieu (herb fritters).
The street is busiest in the morning, when the focaccerias pull their first batches from the oven. Buy breakfast here — focaccia and a coffee standing at one of the bars — and you will understand immediately why Genoese cooking has influenced Italian food culture far beyond Liguria.
