Grotta Palazzese is the sea cave beneath one of Polignano’s most famous restaurants, a natural chamber open to the Adriatic. The restaurant is expensive and very much trading on its setting, but the cave itself is undeniably theatrical.
You do not need to book dinner to understand the appeal. Boat trips along the coast give a better sense of the cave system below the town, with water, limestone, and shadow doing most of the work.
