A small chain of restaurants devoted, mostly, to the city's most internationally famous dish: deboned chicken breast stuffed with herb butter, breaded and fried so that the butter erupts when the fillet is cut. The original Kyiv chicken is a 1918 invention, though the chain itself is recent.
The flagship branch on Khreshchatyk has a slightly modernised menu — chicken Kyiv with mushroom butter, chicken Kyiv with truffle — alongside the classic. A useful stop if you want to tick the city's name dish off the list in a setting better than a Soviet canteen.
